Hello guys! Back to TFJ this weekend & this time I'm celebrating my glorious memory with the one and only, Chipotle Mexican Grill. Have you guys ever tasted a food that is so touching, your mind body and soul just tries to recreate that moment when you had the food? Well that just happened to me and my sister last week aaand, we can't take one more day not being able to eat Chipotle anymore, so we decided to make one. Yes, we searched the best sites to give us the best recipe insights to recreate Chipotle Burrito Bowl and we added a healthy yet fun twist by substituting the rice with black rice. So let's get down with what you can do to make this heavenly bowl of goodness.
For you guys who are not too familiar with Chipotle, it's a food chain started in USA and it serves Mexican delicious dishes like burrito bowl. First off, I want to highlight why I used black rice instead of jasmine rice or basmati rice. Black rice, or some people call it forbidden rice, IMO is the better substitute for white rice. Not only it's delicious, but it also contains high amount of anthocyanin antioxidants that can be found in blueberries. This powerful antioxidant is known to be a strong agent in fighting chronic diseases such as cancer and heart diseases. Black rice is also high in vitamin E and anti-inflammatory properties. My sister and I thought substituting the rice with black rice would a great and healthy idea while we recreated this food masterpiece.
The highlight of Chipotle dish is actually the Chipotle pepper and we got lucky when we found the sauce was sold in one of our favorite grocery shopping place (Chipotle in adobo sauce). We got 70% of the pepper's seeds removed to make sure the chicken that will be marinated with the sauce won't go too hellish spicy (no kidding, you should definitely remove some of the seeds before marinating the chicken or meat). The chicken was marinated overnight and ready to be sautéed in the morning. So once again I just want to bring this up, my food blog is flexitarian, so basically I still eat meat but in a moderate or smaller portion. Meat is good for our body if consumed moderately. Below you can find the result of the sautéed chicken.
The rest of the ingredients are so simple, you can basically buy and prepare them at the table. Maybe some washing or grating is necessary though, but it's all worth it, worth it for your tongue and tummy to taste the heavenly Chipotle signature burrito bowl. For the lettuce, we switch it with romaine lettuce and the capsicum was sautéed also with onion.

Ingredients
1 cup of black rice, cooked
200 grams of chicken breast in chipotle adobo sauce
1 pc of avocado made into guacamole
1/2 head of romaine lettuce
50 grams of grated cheddar cheese
100 grams of black beans
100 grams of corn salsa
4 tbs of sour cream
1 pc of green capsicum, cut and sauteed (optional)
Directions
(The Day Before)
1. You may want to cook the black rice the night before. As it takes quite some time to clean and cook the black rice.
2. You also need to marinate the chopped-into-squares chicken with adobo sauce. Remove 70% - 80% of the chipotle pepper seeds first. Then marinate the chicken and leave it overnight.
(The Cooking Day)
1. Prepare the guacamole by mashing the avocado inside a bowl with lime juice, cilantro, and tomato
2. Sautéed the marinated chicken in a pan with 1 tsp of olive oil. Cook until it's done
3. Clean the romaine lettuce and chop it into smaller pieces
4. You may use the ready to use black beans and corn salsa
5. You may add sautéed capsicum to increase your veggie intake
6. Add sour cream and grated cheddar cheese to give smile to that hungry face of yours, it's the cherry on top, believe me
(but please do watch how much of those you are taking as it's..psstt..high on calories)
